A cracking meal for Easter Sunday and so delicious! There is a bit of work involved but I made the duxelle the day before then froze it overnight and made the roll in the morning. Mine cooked in 2.5 hours as it was a small shoulder but so scrummy along with the potatoes. I served it with the sautéed beans in garlic which were perfect. Thank you Nagi and JB. Shame I can’t post up the picture of the end result!
